This has a great layman's overview of how to setup a MESH wireless network in third world conditions so should work fine in the country in NSW. 
There is also a free PDF version of the book on the site.

linux.conf.au is the annual Linux User Conference - well worth going to - very technical but useful. This year's just finished was in Melbourne but it cycles through most capital cities in Australia.
